The restaurant location next to the Starbucks at Kimball Junction has seen more restaurants
come and go than I can count, but it looks like we finally found a keeper! Why? This restaurant
checks a lot of the boxes for Park City locals and visitors. It’s attractive, affordable, healthy, and
there is plenty of available parking.
Aubergine Kitchen is a local Utah chain, founded in 2014, with 8 other locations in Utah County,
Southern Utah, and the Salt Lake Valley. Their mission is “Changing lives with real food.”
Clearly, they found a formula that works. Their menu features flavors from around the world
made only with unprocessed, whole ingredients. They have seven core principles:
Tasty and healthy
Sweeten with fruit
Focus on nutrients
Made from scratch
Grill or bake
Good fats
Whole foods
For health-conscious people like me, I’m grateful to know there is a local restaurant that is
dedicated to serving good food. Their menu clearly states which meals are vegan and gluten
free. There is a nutrition calculator on their website, so you can see the macronutrients (fat,
protein, carbohydrates), sugar and calories in each dish. Their menu also allows the diner to
customize each dish to their liking and dietary needs. For example, you can substitute the
protein, carbohydrate base (several types of rice, cauliflower rice, or quinoa), toppings, toss ins
and dressing. The menu includes salads, bowls, smoothies, sandwiches, and even comfort
foods like macaroni and cheese. They have a huge selection of delectable gluten free desserts.
I think there is something for everyone at this restaurant.
On the day I had lunch there, I ordered the Wild Fish Bowl. For under 500 calories, this dish
packed over 28 grams of protein. My friend ordered a vegan falafel dish which looked tasty. I
ran into several locals, who all seemed to be enjoying this new place to dine.
The Park City location is located at 1570 Newpark Blvd, Unit D-4 and is open from 7:30am-
